Agave ripens slowly, taking about 8 years. Then the Patron agave farmers, with a skill that is passed down from generation to generation, locate and find the agave with the right sugar content. Using a sharp, specialized tool called a coa, they slowly uncover the heart of the plant, the piña. The piñas are then baked in a small brick oven to ensure they are evenly baked, and crushed either in the traditional way, under two 2-ton stone mills or in a more modern method, using a roller press. The final mixture is left to ferment for 3 days, distilled and aged if necessary in hand-made barrels. The tequila is the crowning glory of the Patron estate, where the bottle is also made by carefully selected glass artists. At each stage, the by-products are reused.
